Roast


Yorkshire puddings: Heat fan oven to 200C or more with Yorkshire pudding tray with a small amount of fat in each section (duck or other meat fat is best). make batter in a bowl, put 60g plain flour and whisk with 1 egg and 1 egg white. Mix in 3fl.oz milk gradually then 2 fl.oz of water or beer. Pour mix onto hot oil in tray and quickly put back in oven for around 15 minutes. Do not open oven when cooking. Serve with beef roast for main course or some syrup for desert.


Toad in the Hole: Put tray with sausages spaced out in preheated fan oven at 200C for about 10 minutes. Make Yorkshire pudding batter as above. Pour over sausages and quickly return to oven. Should be cooked in around 20 minutes.


Pizza Dough: 500g bread flour, 2.5 tsp yeast, 1.25 tsp sugar, 1.25 tsp salt, 2.5 tbsp olive oil, 1.25 cup warm water. Mix together then knead for about a minute. Roll out on baking paper covered with some semolina. Leave for 10 minutes or so to rise then spread thin layer of passata followed by grated mozzarella and any other toppings. Into pre-heated oven at 225 degrees C for about 10-15 minutes.


Onion gravy: Brown onions In frying pan or under roast meat. Mix around 1 tbsp plain flour with onions and fat/oil. Mix in and heat up. Add stock using water (from potatoes/vegetables if available). Stir until thickened a little. Add Worcestershire sauce to colour/flavour if desired. Good with roast or toad in the hole.


Poached eggs: Boil water in pan with dash of vinegar (apple or white wine are good). Put toast into toaster. Break egg into cup and pour gently into boiling water. Push down toaster. When toast pops up, remove egg with slotted spoon and place on kitchen paper. Butter or Marmite toast and place egg on top.
